This twist on a classic sour delivers aromatic brightness from lemon, natural sweetness from honey, and a layered bitter complexity from your bitters. It's refined, memorable, and perfect for cocktail menus or private events.
Ingredients
50ml Dry gin (juniper-forward or citrus-heavy gin works well)
25ml Fresh lemon juice
15ml Honey syrup (2:1 honey to water)
5 dash The Bitter Club Grapefruit & Elderberry Bitters
20ml Egg white or aquafaba (optional, for silky texture)
Garnish
Dried grapefruit slice or a few drops of bitters in the foam
Method
Add all ingredients (including egg white/aquafaba if using) to a shaker
Strain
Dry shake (no ice)
Strain (over large ice if skipping the egg white)
Garnish
