Midnight Sour

This twist on a classic sour delivers aromatic brightness from lemon, natural sweetness from honey, and a layered bitter complexity from your bitters. It's refined, memorable, and perfect for cocktail menus or private events.


Ingredients

  • 50ml Dry gin (juniper-forward or citrus-heavy gin works well)

  • 25ml Fresh lemon juice

  • 15ml Honey syrup (2:1 honey to water)

  • 5 dash The Bitter Club Grapefruit & Elderberry Bitters

  • 20ml Egg white or aquafaba (optional, for silky texture)


Garnish

  • Dried grapefruit slice or a few drops of bitters in the foam


Method

  1. Add all ingredients (including egg white/aquafaba if using) to a shaker

  2. Strain

  3. Dry shake (no ice)

  4. Strain (over large ice if skipping the egg white)

  5. Garnish


Flavour profile: Crisp, herbal, citrus-forward with a rich bitter finish and subtle fruit undertones.
