Twilight Ember

As the sun dips, this glowing mix of aged rum, fresh orange, maple-cinnamon sweetness and warming bitters flickers like campfire coals—an ideal porch-sipper when July evenings turn amber.

Twilight Ember 

Ingredients

  • 50 ml Aged Dark Rum

  • 30 ml Fresh Blood Orange Juice 

  • 15 ml Cinnamon Maple Syrup (1 : 1 maple syrup infused with a cinnamon stick)

  • 10 ml Fresh Lime Juice

  • 5 dashes of Cinnamon & Orange Bitters

  • Top with Ginger Ale

Garnish

  • Dried Orange Slice

  • Cinnamon Stick

Method

  1. Shake rum, juices and syrup with ice.

  2. Strain into a double old-fashioned glass over one large ice cube.

  3. Add a splash of ginger ale and stir once.

  4. Garnish with dried orange slice & cinnamon stick

Flavour profile: Molasses-rich rum brightened by orange and lime; gentle ember-like cinnamon warmth on the finish.
